This recipe uses mussels cooked in a light creamy curry sauce served with a simple salad and wholemeal bread rolls. It makes a delicious main meal for two people or could make a starter for four.

Ingredients
You will need:
- 500g mussels
- 2 tsp vegetable oil
- 100g onion, finely chopped
- Half a green pepper, finely chopped
- 1 level tbsp curry paste
- 250ml water
- 100g half-fat sour cream
- 4 medium ripe tomatoes, finely sliced
- 1 small red onion, finely sliced

- 1 tbsp vegetable oil
- 2 medium wholemeal rolls
Method

Make a salad by layering the sliced tomatoes and onions and grinding over black pepper, and place in the fridge until the mussels are ready to serve.

Prepare the mussels by firstly discarding any that are broken or open. Then, using a sharp small knife, pull away the stringy ‘beard’ and remove any barnacles from the shells. Wash twice in cold clean water.

Heat the oil in a saucepan with a lid, and gently fry the onion and peppers for 4-5 minutes before adding the curry paste and water.

Bring to the boil, stirring all the time.

Add the mussels, stir and put on the lid. Simmer for 3-4 minutes.

Remove the pan from the heat and stir in the cream

Serve at once with the salad, using the wholemeal bread to mop up the juices

Food safety tips
Keep raw shellfish away from ready-to-eat foods such as salad, fruit and bread. Before cooking, throw away any mussels that are opened or damaged – live shellfish will ‘clam up’ if their shell is tapped. To check that a mussel is cooked, make sure the shell is open and the mussel has shrunk inside the shell. If it has not opened during cooking, throw it away.
